Recipe of the Week: One-Pot Beef and Broccoli Stir Fry

Ingredients:

  • 1 lb beef sirloin, sliced thinly
  • 1 head broccoli, cut into florets
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced

Directions:

  1. Heat vegetable oil in a large pot over medium heat. Add the beef and cook until browned. Remove and set aside.
  2. In the same pot, add garlic and ginger, sauté until fragrant.
  3. Add broccoli and stir-fry for 3-4 minutes.
  4. In a bowl, mix beef broth, soy sauce, and cornstarch until smooth. Pour into the pot.
  5. Return the beef to the pot and simmer for 5 minutes until the sauce thickens.
  6. Serve over rice if desired.
